There are few greater senses of accomplishment than the feeling you have when you’ve finished, finally, the preparation of the Thanksgiving turkey. Of course, no matter how many people you’re feeding, there always seems to be some turkey left over after the big day.
I’m in the school of thought that calories don’t count on Thanksgiving, but come Black Friday, I’m ready for some healthy fuel to sustain my shopping sprees and make sure I look great in my holiday cocktail dresses. Fortunately, there are several healthy ways to use up the leftover turkey.
Replace beef in your next lasagna dish with turkey, instead. Using fat-free ricotta and plenty of fresh spinach, this hearty meal is loaded with protein and fiber. If you’re not in the mood for Italian, maybe it’s taco night! White meat shreds wonderfully, making it the perfect filling for tacos, quesadillas and enchiladas. Mix the meat with a little cumin for Mexican flavor, and load these up with all your favorite veggies for a flavorful meal that is loaded with vitamins.
