Best Pumpkin Cake Recipe EVER!


Thanksgiving is a holiday that I allow myself to splurge, and stuff my face until I  can no longer move.   I came across this recipe a few years back and it is a rendition of Paula Dean’s Pumpkin Gooey Butter Cake.  I promise you that this recipe will not disappoint!!! It is literally one of the greatest things ever, and every year I wait until November to have it again. 

Cake Ingredients:
• 1 package of yellow cake mix (18 ¼ ounce)
• 1 egg
• 8 TBS of butter (melted)

Pie filling ingredients:
• 1 package of cream cheese (softened)
• 1 can of pumpkin puree (15 ounce)
• 3 eggs
• 2 teaspoons vanilla extract
• 8 TBS of butter (melted)
• ¾ of a box of powdered sugar (16 ounce)
• 2 teaspoons of pumpkin pie spice


Preheat oven to 360 degrees F.
Cake instructions: Combine all cake ingredients (cake mix, egg & butter) in a large bowl and mix with an electric mixer. Pat mixture down into a lightly greased 13×9 inch baking dish.
Pie filling instructions: Beat cream cheese and pumpkin puree in a large bowl, until smooth. Add eggs, vanilla and butter and continue to beat. Add the powdered sugar, pumpkin spice and mix well. Spread the mixture into the baking dish, over the batter and cook for 40-50 minutes.

Make sure to not overcook, the center should still be gooey.
