Hi I’m Evi, the author of ‘Your Recipe Corner’ on I’ve spent most of my life in Seattle, WA – About 5 years ago I decided to buy a one way ticket to New York City – it’s a long story, but I just finished reading Eat, Pray, Love and felt inspired.

One of the main perks of living in New York City, is you have access to some of the BEST food in the entire world, and it’s usually just around the corner. The food is so easily accessible. On my way to the subway I pass at least 20 restaurants, 6 food trucks, 4 coffee shops and a $1 slice pizza parlor. (Yes! $1 slices and they are DELICIOUS)

Now, after a 10 hour work day would you rather stop by the grocery store and pick up all these ingredients for dinner; or would you rather pay $2-$3 for pizza and call it a night. For me, the nightly routine of getting quick, cheap meal became oh too familiar. I am not sure how the weight snuck on, but 30lbs later I realized that pizza night, every night, was not a sustainable lifestyle – at least not for the long term.

I started reading all the health articles I could find, cooking my own meals and eventually writing my own recipes. I’ve lost some weight along the way, but more importantly I feel a lot better. I still have a ways to go, but the hardest part is getting started. Now that I have your attention, I wanted a way to share some of my recipes that are easy and good for you, so we could take this journey together.
